Why do christians often eat pork on Easter?

One of the things about Christianity that confuses me is that Christians do not follow the dietary laws that are described in the old testament. Most of those laws have good health and nutritional value. When did Jesus say... Oh yeah... and you guys can go ahead and eat Pork, because you're all saved now?!?! I mean, most of the major religions, still are against eating swine meat.
